Carrot is a root vegetable and naturally sugary, crispy carrots contain several health benefiting nutrients such as minerals, beta-carotenes, vitamin A and anti-oxidants in sufficient amounts. It is low in calories and contains high dietary fiber. It is wealthy in several phytonutrients including, antioxidants Beta Carotene, Glutathione, Alpha Carotene, and Vitamins A, C, K, E, Thiamin, Riboflavin and minerals.
Carrots are rich in beta-carotene which protects against macular degeneration as well as helps night vision. It contains falcarinol and falcarindiol which have anticancer properties. It prevents heart disease and stroke. It also prevents premature wrinkling.
It is added to sabjis, rice dishes to make pulav/biryani or daal dishes, in soups etc. Shredded raw carrots make great additions to salads and raitas.
